Ingredients for beef Fillet

  • Diced Butternut

  • Diced Potatoes

  • Chopped onions

  • Salt

  • Pepper

  • Vegetable stock

  • Whipping Cream

  • Olive/Canola Oil

  • Crushed Garlic (optional)

Method

Put your stove on medium heat.

Pour in your oil in a pot and once heated you add onions and sauté your onions till slightly browned.

​

Add your vegetables start with the potatoes cause they cook a bit longer than add butternut and mix together.

​

Season your veggies with salt, pepper.

​

Add your vegetable stock with boiling water and add enough water to cover your vegetables.

​

Put your lid on and let it simmer for 15min.

​

Once cooked and soft you then use a hand blender and blend it in the pot while it's cooking.

​

Add whipping cream.

​

Stir and serve while hot.

 

Enjoy!
